i’ve been wanting to make lace cookies for a long time now. they are so pretty and elegant, and really delicious. they always seem to be the kind of cookie you just can’t stop eating. well, it turns out the homemade ones are no exception. these cookies looked just like the the ones you see at parties or in the store – thin and crisp, with pretty little holes throughout. they were beautifully perfect-looking in their imperfection.

oh, and then there’s the taste. they were wonderfully light, with a deep caramel flavor. i made them into sandwiches with bittersweet chocolate, which was the perfect counterpoint to the sweetness of the cookies, but they could just as easily be served plain, or drizzled with melted chocolate. they were so good and looked so impressive. i brought them to a friend’s house for a party, and they disappeared pretty much immediately.

a beautiful, elegant, and delicious cookie for any occasion.

ingredients
  • 4 tablespoons earth balance (or butter)
  • 2 tablespoons almond milk
  • 1 tablespoon vanilla
  • ½ cup almond flour
  • 1 tablespoon all-purpose flour
  • ½ cup sugar
  • ¼ cup bittersweet chocolate chips
instructions
  1. preheat the oven to 375°f and line a baking sheet with parchment paper.
  2. put the earth balance, almond milk, and vanilla in a small saucepan over medium heat. once the earth balance has melted, add the almond flour, all-purpose flour, and sugar. stir until the mixture reaches a gentle boil, about 2 minutes. remove the pan from the heat.
  3. drop teaspoonfuls of the batter onto the prepared baking sheet, leaving at least 3 inches between them (i did 6 cookies at a time). bake them for 6-7 minutes, until they are dark golden at the edges.
  4. let the cookies cool on the baking sheet for about two minutes, then move them to a wire rack to cool completely.
  5. to make sandwiches, match up the cookies into pairs that are roughly the same size. melt the chocolate either in a double boiler or in the microwave (be careful - chocolate burns easily). for each cookie sandwich, spread some chocolate on one side, then sandwich the two cookies together. let the cookies sit until the chocolate hardens.
